Beef Stronganoff Recipe

This recipe is so easy that you can actually make it in stages if you like. I brown the meat, simmer it in the slow cooker and freeze it in packages. When I am ready to make it I take out the meat, thaw it and then toss everything together quickly for a fast, easy and relatively healthy meal.

Recipe Ingredients for Beef Stronganoff

1 pounds beef round steak, thinly sliced
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1 teaspoon tarragon
1 tablespoon olive oil
1/2 cup mushrooms, sliced
1 yellow onion, chopped
2/3 cup fat free sour cream
1 salt to taste
1 ground black pepper to taste

Recipe Directions for Beef Stronganoff

  1. Remove any fat from the steak and cut into strips 1/2 inch thick by 2 inches long.

  2. Season with salt, pepper and garlic.

  3. In a large non-stick skillet over medium heat, use 1 tablespoon olive oil and brown the beef strips quickly, then push the beef strips off to one side.

  4. Add the onions and cook slowly for 3 to 5 minutes.

  5. Add tarragon

  6. Cover and simmer for 1 hour or until the meat is tender.

  7. Five minutes before serving, stir in the mushrooms, sour cream.

  8. Heat briefly then salt and pepper to taste.

  9. Or, you can make it easier on your self and after browning the meat, throw all ingredients except sour cream into the slow cooker on low for 4 hours and then add the sour cream just before serving. I find the meat is most tender this way.
