Authentic version of beer Stroganoff

Recipe Ingredients for Beef Stroganoff

1 cup beef broth
2 tbsp All Purpose Flour
1 tsp Dry Mustard
2/3 lbs beef tenderloin
2 tsp olive oil
1 onion
10 oz cremini mushrooms
2 tbsp Light Sour Cream
2 tbsp Parsley
4 cups Cooked Egg Noodles

Recipe Directions for Beef Stroganoff

  1. With a whisk, stir broth, flour and mustard in a large non-stick skillet until smooth. Cook over medium high heat, stirring constantly until mixture comes to a boil and thickens.

  2. Pour into a small bowl and cover to keep warm. Wipe the skillet clean.

  3. Pat the beef dry then sprinkle with the salt and 1/8 tsp of the pepper. Heat one teaspoon of oil in the skillet. Add half of the beef and cook, turning once, until browned but still pink on the inside. With a slotted spoon, transfer beef to plate; keep warm. Repeat with remaining oil and beef.

  4. Add onion to skillet. Cook until transluscent. Add mushrooms, 1.4 cup of water, and the remaining pepper. Cook until mushrooms are tender.

  5. Add accumulated meat juices to the sauce mixture in the small bowl.

  6. Return beef to skillet, cook stirring occasionally until just heated through. Move the meat onion mixture to a plate and keep warm.

  7. Add sauce mixture to the skillet and cook until just heated through, remove from the heat and stir in sour cream.

  8. Pour the sauce over the meat, then sprinkle with parsley. Serve with cooked egg noodles.

  9. Yields 2/3 cups of beef stew mixture and 2/3 cup of egg noodles per serving.

  10. Note: Any type of mushroom may be used.
