Recipe Ingredients for Beef Stroganoff

24 ounces beef round, top round
2 tablespoons butter
12 ounces beef broth
2 tablespoons catsup
1 teaspoon salt
1 garlic clove
8 ounces mushrooms, sliced
1 medium onion, sliced
3 tablespoons flour
8 ounces sour cream

Recipe Directions for Beef Stroganoff

  1. Cut beef across grain into strips, each about 1 1/2X1/2 inch. Cook and stir beef in butter in 10-inch skillet over low heat until brown. Reserve 1/3 cup of broth. Stir remaining broth, catsup, salt and garlic into skillet. Heat to boiling; reduce heat. Cover and simmer until beef is tender, about 10 minutes.

  2. Stir in mushrooms and onion. Cover and simmer until onion is tender, about 5 minutes. Shake reserved broth and flour in tightly covered container; gradually stir into beef mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute; reduce heat. Stir in sour cream; heat through. Serve over hot cooked noodles or rice if desired.
