Beef Stroganoff Recipe

Beef and mushrooms in wine sauce served over pasta.

Recipe Ingredients for Beef Stroganoff

1 lbs lean top sirloin steak, thinly sliced
3 tbsp butter
1 onion, thinly sliced
1 1/2 cups mushrooms, sliced
3 tbsp flour
2 tsp beef bouillon
1 tbsp ketchup
1/2 tsp paprika
1/2 tsp dried basil
1/4 tsp nutmeg
3 tbsp sherry wine
4 oz sour cream
1 cup cooked egg noodles

Recipe Directions for Beef Stroganoff

  1. Heat large skillet over med-high heat until hot. Sauté half of the beef in 1 Tbsp butter briefly to brown. Remove beef and any juices from pan into a bowl. Repeat with second half of beef.

  2. In the same pan, without washing out, add 1 more Tbsp butter and sauté the onions and mushrooms until soft. Remove to bowl with the beef.

  3. Melt remaining 1 Tbsp butter. Whisk in 3 Tbsp flour and cook, stirring for 2 minutes. Dissolve the beef bouillon in 2 cups of hot water and whisk into the butter-flour mixture slowly to prevent lumping. Add 1 Tbsp ketchup, ½ tsp paprika, ½ tsp basil and ¼ tsp nutmeg. Bring to a boil, reduce heat and simmer for 10 minutes.

  4. Add meat and mushrooms with onions to sauce and continue to simmer for 10 more minutes. Remove from heat and stir in sherry and sour cream. Serve over egg noodles.
