Great recipe for less tender cuts of beef.

Recipe Ingredients for Beef Stroganoff

1 1/2 lb beef, top sirloin 0 fat
1/2 cup red wine
1/4 tsp black pepper
1 small onion, sliced
5 cloves garlic, minced
3 tbsp olive oil
1 cup mushrooms, canned drained solids
3/4 cup frozen peas
2 tbsp corn starch
12 oz beef broth
1/2 tsp prepared mustard
3 tbsp sour cream
1 tbsp red wine

Recipe Directions for Beef Stroganoff

  1. Cut any fat ang gristle from beef. Cut beef into 1/2 by 2 inch strips.

  2. Season beef with pepper and marinade for 2 hours in 1/2 cup of red wine.

  3. Remove meat from marinade and discard marinade.

  4. Quickly brown beef strips in hot olive oil in a large skillet over medium high heat.

  5. Remove beef to a plate.

  6. Add mushrooms, onion and garlic to the skillet and cook for 3 to 5 minutes.

  7. Stir corn starch into beef broth and add to the skillet.

  8. Return the beef to the skillet, add frozen peas and bring to a boil stirring constantly.

  9. Lower the heat and stir in the mustard.

  10. Cover and simmer for 1 hour.

  11. Five minutes before serving stir in the sour cream and 1 tablespoon of red wine.

  12. Serve over noodles or rice.
