Recipe Ingredients for Beef Stroganoff

6 tbsp margarine
1 lb beef tenderloin, cut into thin strips
1/3 cup scallion, chopped
1/2 lb mushrooms, cremini
1/8 teaspoon nutmeg
2 teaspoons fresh tarragon, chopped
1 cup light sour cream

Recipe Directions for Beef Stroganoff

  1. Melt 3 Tbsp of margarine in a large skillet on medium heat.

  2. Increase the heat to high/med-high and add the strips of beef.

  3. Brown the beef quickly. Sprinkle with salt & pepper.

  4. Remove beef and set aside after it is browned.

  5. In the same pan, reduce heat to medium and add the shallots.

  6. Cook shallots for 1-2 minutes. Remove and put in the bowl with the meat.

  7. In the same pan, melt another 3 tbsp of margarine. Increase heat to medium high and add mushrooms.

  8. Cook, stirring for 4 minutes.

  9. Sprinkle the nutmet and tarragon on the mushrooms.

  10. Reduce the heat to low. Add sour cream to mushrooms.

  11. Mix sour cream in thoroughly. DO NOT LET IT SIMMER or BOIL!

  12. Stir back in the beef and shallots, add salt and pepper to taste.

  13. Serve immediately over egg noodles. (not included in the calorie count)
