Beef and Vegetable stir-fry over noodles

Recipe Ingredients for Beef Stir-Fry

2 tbsp chicken broth
1 tbsp soy sauce
1 tbsp worcestershire sauce
1 tbsp chopped fresh ginger
2 tbsp chopped garlic
1 tsp sesame oil
1 tsp cornstarch
2 tsp packed brown sugar
1 lb beef tenderloin
2 tbsp sesame seeds
1 tbsp peanut oil
1/2 cup red bell pepper
1/2 cup sliced carrots
1 cup mung bean sprouts
3 chopped scallions
4 oz water chestnuts, sliced
3 oz udon noodles, cooked

Recipe Directions for Beef Stir-Fry

  1. marinade - first eight ingredients

  2. Chop beef into small pieces and add to marinade above, chill for at least 1 hour.

  3. Drain marinade and add water to make 1/2 cup and add cornstarch.

  4. Stir-fry beef in olive oil on high heat 1-2 minutes.

  5. Tranfer meat to container with slotted spoon leaving liquid in wok. lower the heat and stir-fry pea pods and carrots until tender. Add red bell pepper and scallions and stir-fry about 1 minute. Add bean sprouts and beef and cook an additional 1 minute. Add marinade/cornstarch mixture and continue cooking until sauce thickens (2-3 minutes).

  6. Serve over udon noodles.
