Quick stir-fry that is a staple of my weekly routine

Recipe Ingredients for Beef Stir-fry

2 cups broccoli
2 cups snow peas
2 cups asparagus
1/2 lb beef
1 red pepper
3 cups white rice
1/2 cup bean sprouts
1/2 cup carrot
2 tsp ginger
2 tsp garlic
1 T soy sauce
2 T peanut oil
2 T stir-fry sauce

Recipe Directions for Beef Stir-fry

  1. Cook rice.

  2. Cut beef into slices against the grain. Marinate in soy sauce with ginger and garlic.

  3. While marinating beef, chop all vegetables.

  4. Blanch broccoli in boiling water for 2 minutes. Remove and place in ice water.

  5. Heat a wok over high heat. Add oil and swirl to coat.

  6. Cook beef in batches. Sat aside, wrap in foil to keep warm.

  7. Add tougher vegetables first (carrot, onion). Cook for a few minutes, add remaining vegetables and return meat to wok.

  8. Add stir-fry sauce and stir quickly.

  9. Serve immediately over rice.
