This stew is great the same day, maybe with dumplings, and freezes well. Which is why I make this in such large amounts.

Recipe Ingredients for Beef Stew

7 lbs beef
1/2 c flour
4 tablespoons vegetable oil
24 oz pearl onions
2 lbs carrots
7 stalks celery
64 oz beef broth
2 cups red wine
6 potatoes
1 lb mushrooms
2 lbs frozen peas
2 lbs frozen green beans

Recipe Directions for Beef Stew

  1. Peel carrots and cut into large dice (not too small, this is a fairly rustic dish)

  2. Cut celery into large dice

  3. Season beef stew meat with salt & pepper, then sprinkle with some flour.

  4. Brown in heated oil (may need to be done in batches).

  5. Place browned beef in a bowl and set aside.

  6. In the same pot, add 1/2 of the carrots, all the celery and 1/2 of the pearl onions (I use frozen - these are the best shortcut ever!).

  7. Cook until they start to soften.

  8. Add red wine to deglaze the pan (if you don't like wine, you can just use additional broth).

  9. Stir in the browned beef & any juices/sauce.

  10. Add 1 qt beef broth.

  11. Season to taste - I use salt, pepper and herbs de provence

  12. Bring to boil, reduce heat to simmer, cover and cook for at least 1 hour (you want the beef to be really tender).

  13. Peel potatoes and cut into large-ish chunks.

  14. Clean mushrooms and cut into quarters.

  15. Add potatoes and remaining carrots & pearl onions to mixture.

  16. Once potatoes & carrots are cooked, add mushrooms, frozen peas and frozen beans.

  17. Add additional broth if necessary, but remember that the frozen vegatables & 'shrooms have a lot of water.

  18. Adjust seasoning as needed.
