Recipe Ingredients for Beef Stew

1 1/2 lbs. beef
1 medium onion
4 cloves garlic
2 T olive oil
1 tsp ginger
1/2 tsp dry mustard
1/2 tsp salt
1 T pepper
1/2 tsp nutmeg
1 1/2 cups chopped carrots
1 1/2 cups chopped yam
5 small red potatoes
3 stalks celery
4 cups organic beef broth
1 cup red wine
2 cups water

Recipe Directions for Beef Stew

Brown the beef (stew beef, chuck or bottom round steak cut up) in half the olive oil in a stew or soup pot. Chop onions and garlic. Remove meat. Add onions and garlic to pot and saute in other half of oil until onions are clear. Add spices, salt and pepper and cook one minute. Cut the vegetables into bite-size chunks and add to the pot. Add wine, water, and broth. Bring to a boil, then reduce heat, cover, and simmer 3-4 hours.
