Makes 4 servings



roasted round steak which is then chopped up and made into a stew

Recipe Ingredients for Beef Stew

12 oz round steak
2 tbls olive oil
1/2 cup onion, cut into quarters
1 1/2 cups potato, diced
1 1/2 cups carrots, diced
1/2 cup merlot
2 cups beef stock
2 cups water
2 tsp black pepper

Recipe Directions for Beef Stew

  1. drizzle olive oil in a roasting pan

  2. place quartered onion in pan

  3. season steak with salt and pepper and sear in a saute pan, then place on top of onions in the roasting pan

  4. add 1/2 cup of water and 1/2 cup of merlot to the pan, cover and roast at 325 for up to 1 1/2 hours

  5. add diced potato and carrots and roast for another hour

  6. remove and chop up steak, then add back to the pan along with remaining liquids

  7. simmer, adding and whisking in a little flour to thicken if needed
