Simple and hearty slow-cooked meat & potatoes meal

Recipe Ingredients for Beef Stew

2 lbs chuck steak, cubed
2 vidalia onions, roughly chopped
6 carrots, sliced
2 small yukon gold potatoes, cubed
12 oz. beer
2 tbsp tomato paste
6 cups chicken stock
2 tsp oil
2 tsp thyme
1 tsp salt
2 tsp onion powder
2 tsp paprika
1 tsp hot sauce

Recipe Directions for Beef Stew

  1. Heat large skillet with oil on medium-high.

  2. Sear beef cubes, then move from skillet into a slow cooker set to 225 degrees.

  3. Saute onions and red peppers until lightly browned.

  4. Add onions, red peppers, potatoes, tomato paste, and seasonings to slow cooker.

  5. Use some of the chicken stock to deglaze the skillet. Add it and the rest of the chicken stock and beer to the slow cooker.

  6. Bring to a boil at around 375 degrees.

  7. Cover and simmer at 275 degrees about 8-10 hours.
