Very heavy on root vegetables. I use no added salt in this recipe, just spices.

Recipe Ingredients for Beef Stew

2 pounds beef stew meat
2 rutabagas
2 turnips
1 cup parsnips
3 carrots
1 green bell pepper
1 onion
2 stalks celery
4 oz mushroom slices
1 1/2 quarts water

Recipe Directions for Beef Stew

  1. Brown stew meat in non-stick skillet. Spray lightly with oil to enhance browning. Season to taste. (I use a combination called Quatre Epices, or Four spices: cloves, ginger, nutmeg, and black pepper.)

  2. Add mushrooms with juice and 1/2 chopped onion to meat after it is brown. Reduce heat to low and simmer until ready to combine with vegetables.

  3. Chop all vegetables into bite sized pieces.

  4. Bring 1.5 quarts of water to boil in large stock pot.

  5. Add cut up vegetables in this order:

  6. Rutabagas

  7. 8-10 minutes later add turnips

  8. 8-10 minutes later add parsnips and carrots

  9. 5 minutes later add pepper, remaining onion and celery

  10. When vegetables are fork tender, combine with meat mixture. These may be combined in the stock pot and continue to cook on low for another 30 minutes to allow flavors to combine. Or entire mixture can be placed in a crock pot and simmered until you are ready to eat it.
