1 pound BEEF STEW MEAT
6 medium RUSSET POTATOES
4 large CARROTS
2 SQUASH, SUMMER ALL VARIETIES
4 ounces FROZEN MIXED VEGETABLES
4 cups WATER
2 BEEF BOUILLON CUBES
1 medium ONION
1 tsp. SALT
1/4 tsp PEPPER
1 tablespoon OLIVE OIL
1/4 cup FLOUR
4 ounces GREEN CHILE

Recipe Directions for BEEF STEW

  1. HEAT OLIVE OIL IN SKILLET, FLOUR STEW MEAT, ADD TO SKILLET, BROWN. IN LARGE STOCK POT COMBINE WATER, BOUILLON CUBES, CHOPPED ONION, BRING TO BOIL. DRAIN MEAT WHEN BROWN ADD TO POT. BOIL ABOUT 1/2 HOUR. PEEL CARROTS AND POTATOES, WASH SQUASH CUT ALL INTO BITE SIZE PIECES, ADD TO POT ALONG WITH CHOPPED GREEN CHILE, SALT AND PEPPER. SIMMER ABOUT 1 HOUR ADD FROZEN VEGETABLE COOK UNTIL MEAT TENDER AND VEGETABLE SOFT BUT NOT MUSHY.

  2. SERVE WITH CRACKERS OR CHOICE OF BREAD.
