Recipe Ingredients for Beef Stew with mustard

1 tbsp Olive Oil
12 oz Beef Stew Meat
1/2 cup, chopped Onions
12 oz Carrots
8 oz Parsnips
12 oz Potatoes, Red, Flesh And Skin
4 cup Chicken Stock
2 tbsp Classic Dijon Mustard

Recipe Directions for Beef Stew with mustard

  1. Preheat oven to 375 degrees. In a large oven-proof pot heat olive oil over medium heat. Brown meat on all sides. Add onion and stir until it begins to soften.

  2. Add carrots, parsnips, potatoes, and stock to pot. Bring to a boil, then turn off heat. Taste and adjust seasonings

  3. Cover pot with its lid or foil. Bake for 1 1/2 to 1 3/4 hours or until vegetables and meat are fork tender.

  4. Using a slotted spoon, remove meat and vegetables to large serving dish (not a platter). Set pot over medium high heat and bring to boil; stir in mustard. Cook a minute or so.

  5. Pour sauce over meat and vegetables and serve.
