Recipe Ingredients for Beef Stew with Carrots

3 tablespoons flour
2 tablespoons olive oil
1 large yellow onion, chopped
3 garlic cloves, chopped
2 pounds beef , 2-inch cubes
2 cups red wine
1 teaspoon sea salt
1/2 teaspoon black pepper, freshly ground
2 tablespoons fresh rosemary, chopped

Recipe Directions for Beef Stew with Carrots

  1. In a brown paper bag or on a large plate, add the flour. Dredge each piece of beef and shake to remove the excess flour. Set aside.

  2. In a heavy pot over medium heat, add the olive oil. Add the onion and garlic and saute until the onion is translucent about 3 minutes. Using a slotted spoon, transfer the onion and garlic to a large plate. Increase the heat to medium-high, add the beef, a few pieces at a time and turn to brown on all sides about 5 minutes. As they are ready, transfer them to the plate holding the onion and garlic.

  3. Do not overcrowd the beef pieces and do not pierce them with a fork - this will release the juices that searing will lock in.

  4. When all the meat is browned and removed from the pot, pour in 1 cup of the wine and deglaze the pan. Add the rosemary, salt pepper and remaining 1 cup of wine.

  5. Return the beef, onion and garlic and any collected juices to the pan. Reduce the heat to low, cover tightly and cook for 1 hour, stirring from time to time.

  6. Add the carrots, cover and cook, stirring occasionally until the meat is tender enough to cut with a fork and the sauce has thickened, 11/2 -2 hours longer. Taste and adjust the seasonings.

  7. Transfer to a warmed serving bowl or serve directly from the pot.
