Recipe Ingredients for Beef Stew, Carol's

3/5 kg stewing beef
2 potatoes, large
3 carrots, large
19 oz kidney beans (lg can)
10 oz beef broth
12 oz corn, canned
7 1/2 oz pizza sauce, canned
2 celery stalks
3 onions, medium
12 mushrooms
1 tbsp margarine
2/3 cup flour

Recipe Directions for Beef Stew, Carol's

  1. Cut stewing beef into bite-size pieces. Dredge in the flour and fry in margarine. Add chopped onions next, reserving one onion to add near the end (cut in larger chunks).

  2. Cook one potato (diced) in half the beef broth and some water, until very well done. Mush with fork or hand blender. Set aside for now.

  3. Meanwhile, cut carrots, celery, and add to stew mix. Add remaining beef broth. Simmer at least an hour, more if possible.

  4. Add mushrooms and last of the chopped onion when 20 minutes or so from done. At this point, can add the reserved potato mixture.

  5. Good and hearty.
