Chop all items into bite size pieces.

Recipe Ingredients for Beef and Squash stew

2 tsp dried thyme
2 tsp salt
1 tsp pepper
5 tbsp cornstarch
1 1/2 lbs chuck roast, cut into bite size pieces, lean removed
2 cups carrots, chopped
3/4 lb potatoes, cut into pieces
28 oz of diced tomatoes, drained
4 cups butternut squash
2 tsp olive oil

Recipe Directions for Beef and Squash stew

Combine thyme, salt, and pepper; reserve 1 tsp of mixture and stir cornstarch into remainder. Toss beef, carrots, and potatoes into the cornstarch mixture and place in slow cooker, fit the ingredients in tightly. Add tomatoes. Toss squash with oit and 1 tsp reserved thyme mixture. Arrange the smaller pieces of squash on top of stew in a circular pattern, then repeat with the larger roundsto create a second layer. Cook on high 3 1/2 hours or low for 8 hours.
