Recipe Ingredients for Beef Spinach-Potato Bake

1 pound beef, ground
1 small onion, chopped
1/2 cup mushrooms, sliced
2 clove garlic, minced
10 ounce frozen chopped spinach, thawed and drained
1/2 tsp ground nutmeg
1 pound russet potatoes, peeled, cooled and mashed
1/4 cup sour cream
1/4 cup milk
2 ounces cheddar cheese, shredded

Recipe Directions for Beef Spinach-Potato Bake

  1. Preheat oven to 400 deg F. Spray deep 9-inch casserole dish with nonstick cooking spray.

  2. Brown beef in large nonstick skillet 6 to 8 minutes over medium-high heat, stirring to break up meat. Drain fat. Add onion, mushrooms and garlic, cook until tender. Stir in spinach and nutmeg; cover. Heat thoroughly, stirring occassionally.

  3. Combine potatoes, sour cream and milk. Add to beef mixture; season with salt and pepper to taste. Spoon into prepared casserole dish; sprinkle with cheese.

  4. Bake 15 to 20 minutes or until slightly puffed and cheese is melted.
