Recipe Ingredients for Beef & Spinach Enchiladas

1 lb extra lean ground beef
1 small onion, chopped
1 1/2 cups frozen spinach
4 ozs light cream cheese, cut into cubes
1/2 tsp cumin
4 1/2 oz mild green chilies
2 cups shredded light Monterey Jack cheese, divided
8 flour tortillas (8-inch)
8 oz tomato sauce
1 cup mild salsa
2 tbsp chopped fresh cilantro
1/2 cup Sliced jalapeno
1 nonstick cooking spray

Recipe Directions for Beef & Spinach Enchiladas

  1. Preheat over to 350 degrees. Spray 2 1/2 qt baking dish with nonstick cooking spray

  2. In nonstick skillet, brown ground beef until no longer pink. Drain. Set aside.

  3. In same skiller, saute onions until soft, add spinach, cook 3/5 mins or until spinach is thawed.

  4. Stir in beef, cream cheese, cumin, green chilies, and 1 1/2 cup light Monterey Jack cheese.

  5. Place small amt of beef mixture down center of each tortilla, roll up, place seam-side down in prepared baking dish.

  6. In seperate bowl, mix tomato sauce and salsa. Spoon sauce over tortillas and sprinkle with remaining cheese and sliced jalapenos.

  7. Bake in 350 deg oven for 20-25 mins. Sprinkle with fresh cilantro.
