Recipe Ingredients for Beef and Rice Balls in Chilli Sauce

55 g rice (basmati)
300 g minced beef (lean)
2 cloves garlic (crushed)
1/2 teaspoon salt
1/2 teaspoon ground cumin
1 teaspoon ground coriander
1 onion (medium, chopped)
1 pepper (red, green or yellow)
2 teaspoon sunflower oil
400 g canned tomatoes (with chilli)
1 tbsp mango chutney (spiced)
1/2 teaspoon oregano
1/2 teaspoon black pepper
1/4 teaspoon salt

Recipe Directions for Beef and Rice Balls in Chilli Sauce

  1. Boil the rice according to the pack instructions but allowing it to over-cook slightly so it is soft. Leave to cool completely.

  2. Mix the rice with the bee, salt, garlic, cumin and coriander. Divide and shape into 12 balls, rolling them between wet hands.

  3. Heat a large, non-stick saucepan. Brown the meatballs in the saucepan, turning them carefully as they colour. When evenly browned, transfer to a plate.

  4. Add the onion, pepper and oil to the saucepan. Stir well and cook gently for 5 minutes, or until softened.

  5. Stir in the chopped tomatoes, herbs, chutney and 200ml water.

  6. Season to taste with the salt and black pepper, bring to the boil and then return the meatballs to the saucepan.

  7. Reduce the heat to a simmer and cook for 12 minutes, stirring occasionally.
