Excellent, but I don't understand why you would serve this over mashed potatoes, although they make a nice side dish for it.

Recipe Ingredients for Beef Ragout with Roasted Winter Vegetables

2 cups winter squash
2 cups potatoes, sweet (or any combination of 4 cups veggies: carrots, butternut squash, sweet potatoes)
1 onion, medium, cut into 1/2" pcs
2 tbsp olive oil, extra virgin
1 1/2 lbs beef sirloin, cut into 1" cubes
3/4 cup chicken broth
5 tsp bay leaves
1/2 tsp Thyme leaves
1/2 tsp Black pepper
1/2 tsp salt
1/4 cup wine, non alcoholic, red, dry (or apple juice)
3 cups potatoes, mashed (prepared

Recipe Directions for Beef Ragout with Roasted Winter Vegetables

  1. Preheat oven to 425*. Toss veggies and onion with 1 tbsp olive oil. Place on baking sheet, roast 20 minutes or until golden.

  2. Saute beef in 1 tbsp olive oil over medium-high heat for 5 minutes, or until browned. Add roasted veggies, broth, 3 bay leaves, thyme, pepper, salt and wine. Simmer 5-10 minutes, or until sauce is slightly thick.

  3. Prepare mashed potatoes, adding 2 bay leaves to the water. Serve stew over potatoes.
