Recipe Ingredients for beef and quinoa stuffed peppers

1 tbsp olive oil
1 cup chopped onion
6 oz mushrooms, sliced
1 tbsp cumin
2 cloves garlic, minced
15 oz diced tomatoes
1/2 lb lean ground beef
3/4 cup quinoa
1 cup chicken broth
1/2 cup grated carrot
3/4 cup low fat cheddar cheese
1/2 cup Parmesan cheese
4 large bell peppers

Recipe Directions for beef and quinoa stuffed peppers

  1. saute onions an carrots in olive oil

  2. add mushrooms and tomatoes and saute 5 minutes

  3. add cumin, ground beef and quinoa

  4. add chicken broth and simmer about 20 minutes, until quinoa is tender

  5. combine with cheeses

  6. clean peppers and cut in half lengthwise

  7. stuff peppers with filling

  8. bake at 350 for 1/2 hour
