Recipe Ingredients for Beef, Potato, and Quinoa Soup

1 serving Extra Virgin Olive Oil
5 medium (4-1/8" long) Onions, Spring Or Scallions
3 clove Garlic
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 serving Ground Cumin
8 oz Beef, Tenderloin
5 cup (8 fl oz) Water
1/2 cube Beef Bouillon
1 cup, chopped Carrots
10 strips Peppers, Sweet, Yellow
1 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Russet, Flesh And Skin, Baked
1 cup Quinoa
1 serving, raw Cilantro

Recipe Directions for Beef, Potato, and Quinoa Soup

  1. Saute oil in a large pot, add6-7 scallions and2 cloves garlic and sauté until soft over medium heat, about 3 minutes. Add tomato,1 tsp cumin,1/2 tsp sazon with annato, 1/4 cup cilantro and cook another 2 minutes. Add1/2# diced beef,5 cups water, bullion, 1carrot,1/4yellos bell pepper and bring to a boil. Cover and simmer on low about 1-1/2 hours, until meat is tender.

  2. Add potato and cooked quinoa and cook an additional 25 minutes. Add remaining chopped cilantro. Salt and pepper to taste.
