Using just a bit of curry paste, this tastes more like a stew than a curry. Yummy.

Recipe Ingredients for Beef and Potato Curry Stew

2 tsp oil, grapeseed
1 kg lean beef, cubed
1 onion, diced
2 garlic cloves, sliced
2 tbsp curry paste
1 cup spinach
1 potato, cubed
1/2 cup yoghurt

Recipe Directions for Beef and Potato Curry Stew

  1. Heat oil in a skillet and brown the beef, then set aside and brown the onion and garlic and add the curry paste.

  2. When onions are soft, add the beef again and some water.

  3. Add the potatoes and cook until all is tender and desired consistency.

  4. Add the yoghurt and heat through, and serve with brown basmati rice or whatever you like.
