Beef Pot Roast with vegetables no potatoes

Recipe Ingredients for Beef Pot Roast

16 oz beef broth
1/2 lb beef roast
4 oz mushrooms
1 onion
5 cloves garlic
1/4 lb carrots
2 1/2 oz red wine
1/2 tsp salt
1/2 tsp black pepper
2 tbsp cornstarch
2 tsp extra virgin olive oil
2 stalks celery

Recipe Directions for Beef Pot Roast

Brown and sear meat in dutch pot in oil. Add chopped vegetables, broth, wine and seasonings. Simmer on low heat 2-3.5 hours until meat is tender. Strain off liquid. Stir 2 tsp of corstarch in 1/4 cup water and add to broth heat until thickened. I serve this with my whole multi grain pilaf you can find here.
