Beef Pot Roast w/ Potatoes & Carrots

Recipe Ingredients for Beef Pot Roast w/ Potatoes & Carrots

1/2 large white onion - chopped
1 pound baby carrots
1 3/5 pounds beef bottom round roast
1 cube beef bouillon
4 cups potatoes - about 20 small

Recipe Directions for Beef Pot Roast w/ Potatoes & Carrots

  1. Brown the beef bottom roast in a large skillet, using cooking spray.

  2. Boil one cup of water and dissolve beef bouillon cube.

  3. Peel potaoes.

  4. Add the beef to the crock pot and pour beef broth over it. Add the potatoes and carrots.

  5. The broth will NOT cover the beef and vegetables, but do NOT add any additional liquid.

  6. Cook on HIGH for 2 hours then turn crock pot on LOW and cook an additional 4 hours.
