Great use of leftover beef, and perfect for a chilly day.

Recipe Ingredients for Beef Pot Pie

1 1/4 cups all-purpose flour
1/2 cup butter, cold
1 egg yolks
3 tbs cold water
8 oz beef roast, pre-cooked and cubed
2 cups frozen mixed vegetables
1 1/2 cups canned sweet potatoes, drained, rinsed and chopped
2 medium potatoes, diced
2 cups beef broth
1 tbs flour
1 tbs butter

Recipe Directions for Beef Pot Pie

  1. To make the crust, cut in 0.5 cup cold butter into flour until chunks are about pea-sized. Lightly beat egg yolks and 1 tbs water together, then combine with flour/butter mixture. Stir til smooth and dough forms a ball. Wrap in plastic and store in the refridgerator for 30-60 minutes. (can be used right away, but it's harder to work with)

  2. Melt remaining tbs of butter in a pan, stir in remaining flour, and cook until flour is slightly brown. Whisk in the broth, and add filling ingredients (everything left). Cook until liquid is thickened slightly, then dump carefully into deep pie pan. Roll out dough to cover pie pan and filling, cover filling and cut 4 2-inch slits in the crust.

  3. Bake at 375F for 30-45 minutes or until crust is golden brown and filling is bubbly.
