Recipe Ingredients for Beef Pot Pie Filling

3 lb beef chuck, clod roast
3 tbsp vegetable oil
4 tbsp unsalted butter
12 oz portobello mushroom
2 medium onions
2 tbsp tomato paste
4 garlic cloves
2 tsp fresh thyme
1 tsp fresh rosemary
3/4 cup flour
1 cup dry sherry
4 cups low-sodium chicken broth
1 cup heavy cream
1 lb frozen pea and carrot

Recipe Directions for Beef Pot Pie Filling

Season beef with salt and pepper. Brown one half at a time 7-10 minute in oil over medium-high heat. Add butter, mushrooms, onions, 1 tsp salt, cover and cook on medium-low 10 minutes, or until mushrooms release liquid. Uncover, increase to medium high, cook to dry and browned, 5-10 minutes. Add tomato paste, garlic, thyme, and rosemary, cook to fragrant (30 seconds), stir in flour and cook stirring constantly 1 minute. Stir in sherry, deglazing, then slowly whisk in the broth and cream. Add meat and juices to simmer. Reduce heat to low, partially cover, simmer until meat is tender, 45 minutes. Off heat, stir in peas and carrots, and salt and pepper to taste.
