Beef noodle soup using rice sticks as the noodles.

Recipe Ingredients for Beef noodle soup - homemade

1 gallon beef broth
4 oz roast beef, sliced
3 cups bok choy, chopped
2 carrots, sliced
4 stalks celery, sliced
6 mushrooms, diced
4 cups rice noodles, cooked

Recipe Directions for Beef noodle soup - homemade

After simmering beef bones for hours on end, place in refrigerator overnight. The next day, remove the accumulated fat from the top of the pot and remove the beef bones. Add vegetables and simmer for 2 hours. Add package of rice noodles and beef to soup and mix in well. Let simmer another hour then you're good to go! Salt or season otherwise to taste!
