Recipe Ingredients for Beef Noodle Skillet

1 tsp cooking oil
1 lb lean ground beef
1 tsp seasoned salt
1/2 tsp black pepper
14 oz diced tomatoes (with juice)
12 oz vegetable juice (like V8)
1 cup water
8 oz penne pasta
1 cup frozen mixed vegetables, thawed
1 cup sour cream
1/4 cup parmesan cheese, grated
2 tbsp green onion, chopped

Recipe Directions for Beef Noodle Skillet

  1. Heat cooking oil in large frying pan on medium-high. Add ground beef, seasoned salt and pepper. Scramble-fry for 5 to 10 minutes until beef is no longer pink. Drain.

  2. Add died tomatoes (with juice), vegetable cocktail juice and water. Stir.

  3. Add pasta and vegetables. Stir well. Bring to a boil. Reduce heat to medium. Cover. Simmer for about 18 minutes, stirring occasionally, until pasta is tender but firm.

  4. Add sour cream, parmesan cheese and green onions. Heat and stir for about 1 minute until heated through.
