Recipe Ingredients for Beef Lettuce Cups

660 g lean ground beef
145 g red onion, finely diced
170 g carrots, finely diced
240 g red bell pepper, finely diced
135 g spring onions, finely diced
2 tbsp soy sauce
2 tbsp hoisin sauce
12 g garlic, finely diced
25 g ginger root, finely diced
125 g water

Recipe Directions for Beef Lettuce Cups

  1. Prepare the ingredients

  2. Brown onion in pan sprayed lightly with extra virgin olive oil spray

  3. Add meat to the pan and brown

  4. Add carrot, capsicum and spring onions and cook until tender for 5-7 mins always stirring

  5. While veggies cooking, mix together sauce ingredients i.e. soy sauce, hoisin sauce, garlic, ginger and water

  6. Add to the pan and cook for a further 5 mins always stirring

  7. Serve small portions in crisp lettuce leaf cups (not included in ingredient list so add to food log separately according to weight)
