This is a beef goulash recipe from the book "1,001 Delicious Recipes for People with Diabetes" by Sue Spitler et al (C.2007), slightly modified.

Recipe Ingredients for Beef Goulash

16 oz Beef, Round, Eye Of Round
0.167 oz Extra Virgin Olive Oil
3 large Onions
1 cup, diced Mushrooms, Portabella
15 oz Diced Tomatoes
2 tsp Paprika
0.5 tbsp Cocoa, Dry Powder, Unsweetened
2 cup, chopped Cabbage
2 tsp Caraway Seed
12 oz Whole Wheat Egg Noodles

Recipe Directions for Beef Goulash

  1. 1. Saute beef in oil in large saucepan until browned; add onions and mushrooms and saute 5 minutes.

  2. 2. Add tomatoes with liquid, paprika, and cocoa and heat to boiling; reduce and simmer, covered, until beef is tender, 45 to 60 minutes.

  3. 3. Add cabbage and caraway seeds in the last ten minutes of simmering.

  4. 4. Season to taste with salt and pepper; serve over noodles.
