This enchilada recipes cuts the amount of meat by adding in brown rice and pinto beans. The kids love it and it's great for making in advance and freezing!

Recipe Ingredients for Beef Enchiladas

1/2 lb lean ground beef, cook and drained
16 ounce pinto beans, rinsed and drained
1 cup brown rice, cooked
1/2 cup onion
8 flour tortillas - Large, 10 inch, cut into strips
2 cups cheddar cheese, shredded
6 ounce tomato paste
1 1/2 cups water
2 tsp mild chili powder
2 tsp paprika
2 tsp corn starch
1 1/2 tsp salt
1 tsp dried onion flakes
1 tsp sugar
1 tsp cumin
1 tsp garlic powder
1/2 tsp oregano, dried
1/2 tsp coriander
1/4 tsp cayenne pepper

Recipe Directions for Beef Enchiladas

  1. Brown and drain ground beef over medium heat.

  2. Stir in onion and cook until tender. Add pinto beans, rice, and 1 cup of cheese. Set aside.

  3. Combine all seasoning ingredients in a small bowl. Combine tomato paste and water in a medium saucepan and heat over medium heat. Stir in seasoning mixture.Simmer over low heat for 15 minutes.

  4. Spray bottom of a 13" casserole dish with cooking spray. Add 1/2 cup of sauce to bottom of pan. Add a layer of tortilla strips. Follow with a layer of beef mixture, another layer of sauce, then tortillas, beef mixture, tortillas, sauce and top with remaining cheese.

  5. Cover casserole dish with 2 layers of plastic wrap then a sealing lid or heavy aluminum foil. Freeze

  6. To serve, thaw overnight in refrigerator. Remove plastic. Heat, covered with foil, in 350 for 35 minutes or until heated through.
