Recipe Ingredients for beef enchiladas

2 lbs lean ground beef
3 cups chopped onion
3 cups shredded sharp cheddar cheese
24 corn tortillas
1/4 cup cooking oil
3 cups enchilada sauce

Recipe Directions for beef enchiladas

  1. brown beef in heavy skillet. add handful of onions during cooking. ( may add garlic powder at this time, if desired)drain meat when done and allow to cool for 20 min-this keeps you from burning fingers !

  2. place sauce in large skillet. heat to just warm.

  3. place oil in another skillet. heat to just warm.

  4. cover counter with plastic wrap (this keeps mess in one area and makes clean up much easier).

  5. dip tortillas in oil, and then in sauce. place some beef, onion, and cheese on tortilla and roll up. place seam side down in 9x13 pan that has had some sauce spread over bottom. repeat until pan filled ( will hold 24 tortillas)

  6. pour remaining sauce over all.

  7. sprinkle remaining beef, onions, and lots of cheese

  8. over top.

  9. bake at 350 degrees for 20-30 minutes.
