Shredded beef enchiladas with easy homemade sauce.

Recipe Ingredients for Beef Enchiladas

1 tbsp vegetable oil
1 onion, minced
1/2 tsp salt
3 tbsp chili powder
3 garlic cloves, minced
2 tsp cumin
2 tsp sugar
16 ounce tomato sauce
1/2 cup water
2 lb chuck roast
3/4 cup water
12 tortillas
2 cups chedder cheese, shredded

Recipe Directions for Beef Enchiladas

  1. Beef for echiladas:

  2. Brown roast in hot oil. Transfer to crock pot. deglaze pan with water. Add to crock pot. Cook low for 8 hours or high for 4 or 5 hours. Shred beef.

  3. Enchilada Sauce:

  4. Heat oil in a 12-inch skillet over medium heat until shimmering. Add the onion and salt and cook until softened, about 5 minutes. Stir in teh chili powder, garlic, cumin and sugar. Cook until fragrant, about 15 seconds. Stir in the tomato sauce and water. Bring to a simmer and cook until slightly thickened, about 5 minutes. Season with salt and pepper to taste. Strain the sauce through a sieve if you want a smooth sauce.

  5. Optional: Add "pulp" from straining sauce to the shredded beef. Season wiht salt & pepper to taste.

  6. Stack 6 tortillas on plate, cover with plastic wrap and microwave on high 40-6- seconds. Coat tortillas with sauce. Fill warm tortillas wiht approx. 1/3 cup of beef, 1 tbsp or so of shredded cheese. Roll up and place in 9x13 pan sprayed with Pam. Repeat with remainig totillas. When all tortillas are in pan, spray them with Pam. Top with desired amount or remaining amount of sauce and more cheese.

  7. Cover and bake at 400 degrees for 20-25 min or until heated through.

  8. Chicken can be subtituted for beef.
