A French dish but also very New Orleans

Recipe Ingredients for Beef Daube

2 tbsp olive oil
1 large onion
60 g celery
1 bell pepper
1 kg Beef
60 g plain flour
600 g beef
2 clove garlic
150 g red wine
2 tbsp vinegar
2 tbsp tomato puree
1/2 tsp tabasco
5 g thyme
2 g bay leaves
2 1/2 g cajun spice

Recipe Directions for Beef Daube

  1. Heat oil in a large heavy based, flameproof caasserole. Cut the onion into wedges and cook until browned on all sides. Remove with a slotted spoon.

  2. Chop the celery and bell pepper add to the pan and cook until softened. Remove vegtables with slotted spoon.

  3. Coat the meat in seasoned flour, add to the pan and saute until browned on all sides.

  4. Add the stock, garlic, wine, vinegar, tomato puree, tabasco and tyme and heat gently.

  5. Return the onions, celery and peppers to the pan. Tuck in the bay leaves and sprinkle with Cajun seasoning.

  6. Bring to the boil, transfer to the oven and cook for 2h30min to 3h, or until the meat and vegtables are tender.

  7. Serve the beef daube with french bread.
