Recipe Ingredients for Beef Curry With Vegetables

2 lbs of flank steak
1 cup of green beans
1 cup of onions
2 cups of scallions
2 cups of red potatoes
2 tablespoons of garlic
6 cups of bok choy
6 oz of curry paste
1/2 cup of carrots
1 cup of mushrooms
3 cups of coconut milk
1 bell pepper
2 cups of cilantro
1 cup of basil
2 tablespoons of peanut oil
1 salt and pepper to taste

Recipe Directions for Beef Curry With Vegetables

Heat large skillet with oil and add crushed garlic and chopped onions and a pinch of salt and pepper over medium high heat for 4 minutes. Chop the rest of the vegetables into 1 inch size or small bite size. Add the stems of bok choy, carrots, potatoes and mushrooms to pan and a pinch of salt and pepper and stir fry all vegetables for 5 minutes and lower the heat. Bits will start to stick to the bottom so don't worry. Add curry paste (green or red) and completely cover the vegetables until everything is coated for another 2 minutes. Then cut meat into 1 inch or bite size and add to the pot, stir and then add coconut milk. Let boil for 5 minutes and then lower heat, add salt and pepper to taste, stir and then cover skillet or pan at low heat for about 20 minutes or until meat and potatoes are done. Add 2 cups of cilantro and a handful of thai basil when done and stir into the pan and serve over cooked rice.
