Beef Curry and Potatoes from "New Dieter's Cookbook" by Better Homes and Gardens, p.159

Recipe Ingredients for Beef Curry and Potatoes

12 ounces beef top round steak (3/4 pound), lean
2 medium potatoes, halved and thinly sliced (about 12 ounces total)
1/2 cup beef broth
2 teaspoons cornstarch
1/4 teaspoon salt
3/4 cup chopped onion
3/4 cup green pepper, chopped
1 tablespoon vegetable oil
2 teaspoons curry powder
1 medium tomato, chopped

Recipe Directions for Beef Curry and Potatoes

  1. Partially freeze meat about 30 minutes. Thinly slice across the grain into bite-sized strips. Set aside.

  2. Cook potatoes in lightly salted boiling water about 5 minutes or until tender. Drain and set aside.

  3. Separately, mix beef broth, cornstarch and salt.

  4. spray an unheated wok or large skillet with nonstick cooking spray. Preheat over medium-high heat.

  5. Add onion and stir-fry for 2 minutes. Add sweet pepper and stir-fry about 2 minutes more or until vegetables are crisp-tender. Remove from wok or skillet.

  6. Add oil to hot wok or skillet. Add meat and curry powder. Stir-fr for 2 to 3 minutes or to desired doneness. Push meat from center wok.

  7. Stir sauce and add to center or wok/skillet. Cook and stir until thickened and bubbly. stir in onion mixture, potatoes, and tomato. Cook and stir for 2 minutes more.
