Beef soup with lentils and chutney

Recipe Ingredients for Beef chutney soup

3 cups dried lentils
1 large Onions
3 garlic cloves, minced
2 chopped carrots
1 leek, halved and chopped
2 stalks celery
2 tablespoons vegetable oil
16 oz Beef, Chuck
7 cups beef broth
8 ounces Fruit Traditional Chutney
1/2 tsp cinnamon
1/2 tsp allspice
1 tsp cumin
1/4 tsp ginger
1/4 tsp mace
1/4 tsp white pepper

Recipe Directions for Beef chutney soup

  1. Soak lentils for 10 minutes in water to cover. Rinse and drain.

  2. Cook vegetables in oil until wilted. Add beef, beef bone, 12 cups water and bring to a boil, skimming froth. Simmer uncovered for 1.5 hours until lentils are soft. Add spices, stock and chutney. Simmer for 1 hour until very thick. Serving = 1.25 cups
