Recipe Ingredients for Beef and Cheese Manicotti

1/2 cup onion, chopped
1/4 cup sweet peppers
1/2 pound ground beef
2 garlic cloves, minced
1 teaspoon black pepper
1 teaspoon garlic salt
8 ounce manicotti
15 ounces ricotta
2 1/2 cups parmesan, grated
8 oz pecorino romano cheese or parmesan
2 eggs
3 teaspoons parsley, chopped
1 2/5 lb marinara sauce

Recipe Directions for Beef and Cheese Manicotti

  1. Preheat the oven to 350 degrees F

  2. Cook the beef, onions and garlic, seasoned with salt and pepper, until the meat is brown, and onion translucent.

  3. Cook the pasta until tender yet firm, drain, rinse, drain again, dry.

  4. Combine the cooled meat mixture, 1 cup parmesan, ricotta and 1 1/2 cups of the mozzarella cheese, eggs, 2 tbs parsley, salt and pepper in a bowl.

  5. Pour 1/3 marinara sauce in a baking dish, spoon the filling into the pasta shells, arrange them in the dish. Pour the rest of the marinara over the top.

  6. Bake for 30-60minutes covered with foil. Remove the foil, sprinkle with the remaining 1 cup mozzarella and bake for 5 more minutes, or until the cheese is melted.
