Nice dish to serve when you are having guests over.

Recipe Ingredients for Beef and Cheese Enchiladas

2 lbs. Ground beef, browned and drained
30 ounce Enchilada sauce
1/4 lb Velveeta cheese, made with 2% milk, cubed
10 flour tortillas
8 ounces sour cream, low-fat
15 ounce cream of chicken soup
15 ounce cream of mushroom soup
2 cups mexican blend cheese, shredded

Recipe Directions for Beef and Cheese Enchiladas

  1. Preheat oven to 350 degrees.

  2. In a large skillet, brown ground beef and drain. Return to skillet.

  3. Add 1 can enchilada sauce and 1/4 pound velveeta cheese. Simmer over medium-low heat until cheese is melted.

  4. Pour remaing can of enchilada sauce into a 11x9 baking pan.

  5. Warm tortillas according to package directions.

  6. Add 1/8 to 1/4 cup of meat mixture to each tortilla; roll like a burrito. Place seam side down in the baking dish. Repeat.

  7. Mix sour cream and soups together. Spread across the enchiladas.

  8. Top with the shredded cheese.

  9. Place in preheated oven and bake for 30 minutes or until cheese is melted and bubbly.
