A high protein version of weight watchers skinny soup

Recipe Ingredients for Beef and cabbage soup

1 small Squash, Summer, Zucchini, Includes Skin
1 cup Spinach
1 cup, chopped Carrots
4 cup No Salt Added Fat Free Beef Flavored Broth
4 tbsp Onion Soup Mix
28 oz Diced Tomatoes
2 oz Tomato Paste
2 cup, chopped Cabbage
1 cup, chopped Onions
2 tsp, ground Basil, Dried
10 oz Beef, Top Sirloin
2 oz Bay Leaves
2 serving Cayenne Pepper
2 tbsp Sage, Ground
2 serving Herbes de Provence
2 tbsp Hot Sauce
3 clove Garlic

Recipe Directions for Beef and cabbage soup

  1. Saute onions with beef (diced) and 2 cloves garlic in a pan with cooking spray.

  2. Bring 4 cups of reduced sodium beef broth and 4 cups onion soup mix and water to a boil.

  3. Add spices to broth at the same time as the onions and beef. Save the hot sauce and only add as needed reduced sodium broth is pretty tasteless.

  4. Chop veggies into small pieces and add to broth. If you don't like spinach you can put 4 cups of cabbage.

  5. Simmer for 2 hours adding hot sauce to taste and 1 cup of water per hour.
