Recipe Ingredients for Beef & Cabbage Soup

15 2/5 oz sirloin beef, ground
152 g red onion, diced
11 g fresh garlic
1/2 tsp bay leaves
1/2 tsp thyme
1/2 tsp marjoram
1/2 tsp salt
1/4 tsp pepper
186 g zucchini
427 g cabbage, chopped
118 g carrots, halved length wise and sliced
159 g celery, sliced
1 l beef broth
75 ml tomato paste
1 cup brown rice, cooked

Recipe Directions for Beef & Cabbage Soup

  1. In large saucepan, brown beef over medium-high heat, breaking up with spoon. With slotted spoon, transfer to bowl. Drain fat from pan; wipe out pan.

  2. Heat oil in same pan over medium heat; cook onion, garlic, bay leaves, thyme, marjoram, salt, pepper and cloves, stirring often, until onion is softened, about 5 minutes.

  3. Stir in cabbage, carrots and celery; cook, stirring, for 3 minutes.

  4. Add broth, 3 cups (750 mL) water and tomato paste. Return beef to pan and bring to boil; reduce heat, cover and simmer until cabbage is tender, about 15 minutes.

  5. Stir in rice and heat through, about 2 minutes. Discard bay leaves.
