A hearty stew of chuck and butternut squash.

Recipe Ingredients for Beef and Butternut Squash Stew

2 tbsp olive oil
1/2 onion, chopped
2 cloves garlic, minced
1 tbsp Herbs de Provence
560 g chuck roast, 2 inch cubes
1/2 tsp salt
1/2 tsp pepper
2 tbsp flour
1 cup Marsala wine
500 g butternut squash, 1 inch cubes
1 tomato, quartered
3 cups beef broth

Recipe Directions for Beef and Butternut Squash Stew

  1. Heat oil in a large soup pot over medium heat.

  2. Sweat onions, garlic, and herbs for 2 minutes.

  3. Toss beef in salt, pepper, and flour.

  4. Add to pan and brown (about 5 minutes).

  5. Deglaze pot with wine.

  6. Add squash and tomato.

  7. Add just enough broth to cover (about 3 cups).

  8. Bring to boil, then reduce to simmer. Simmer 1 hour.
