Recipe Ingredients for Beef broth vegetable soup

4 cups beef broth
2 cups hot water
1 cup wild rice
1 zucchini
1 onion
3 oz kidney beans
12 baby carrots
1 cup broccoli
1/2 cup corn

Recipe Directions for Beef broth vegetable soup

  1. Bring to a boil, add rice and carrots, and onion sliced thin. Cook until tender. Add cubbed zucchini, corn kernels from 1 ear of corn cut fresh or half a can of unsalted corn. Add rough chopped broccoli and beans.

  2. Let simmer for about 5 minutes then serve, with parsley if desired.

  3. Low calorie and filling.
