Like stewed beef but with a nice burgundy flavor.

Recipe Ingredients for Beef Bourguignon

3 serving Cooking Wine
1 Shot Brandy
4 medium Onions
2 medium Carrots
32 oz Beef, Chuck, Blade Roast
4 tbsp Olive Oil
1 oz Wheat Flour, White, All-purpose, Enriched, Bleached
1 tbsp Tomato Paste
4 tbsp Butter
16 oz Mushrooms

Recipe Directions for Beef Bourguignon

  1. combine 3 cups of burgundy wine, 2 tbls cognac, 2 onions, carrots, sprig of fresh parsley, 1 bay leaf, 1 clove of crushed garlic, 10 peppercorns and salt. Mix well and add cubed beef. cover and marinate for two days.

  2. Preheat oven to 300

  3. Strain the meat from the vegetables and marinade. reserve marinade. Brown meat in 2 tbls of olive oil. Transfer to roasting pan.

  4. Pour a cup of marinade into the skillet to deglaze. return liquid to the reserved marinade.

  5. Heat 2 tbls oil in skillet, add onion and carrot from marinade, along with two additional chopped onions. Saute till tender. Transfer to roasting pan. Make a roo with 3 tbls of flour and butter.

  6. Add 1 tbls of tomato paste, 2 cloves of crushed garlic, 1 can of beef broth, the reserved marinade and salt and pepper. Simmer till smooth. Add to roasting pan.

  7. Bake at 300 for 3 hours, stirring occasionally and adding water as needed. Season with salt and pepper to taste.

  8. About 15 minutes before meat is done baking, cook mushrooms in skillet till lightly browned. When meat is tender add mushrooms to meat mixture and let sit for about 15 minutes.
