I usually add 10 or so shelled shrimp for my husband, but this is a nice quick stir fry recipe. Marinating the beef in the stir fry sauce before cooking makes it a little more tender and gives it a nice flavor. You can marinate it as little as 20 minutes while you chop the vegetables or up to an hour. Any longer and it should be covered and put in the fridge until you begin preping for dinner.

Recipe Ingredients for Beef Bok Choy Stir Fry

3/4 lb lean sirloin, sliced thin
3 cups Bok Choy, chopped
1 medium red bell pepper, sliced
1 1/2 cups shiitake mushrooms, sliced
1 cup scallions, chopped
1/2 small purple onion, chopped
1 tablespoon ginger, grated
2 cloves garlic, minced
2 tablespoons extra virgin olive oil
72 g Stir-Fry Sauce
2 tablespoons cashews, chopped

Recipe Directions for Beef Bok Choy Stir Fry

  1. Placed sliced beef in a bowl and pour about 1/4 cup of stir fry sauce over, tossing gently to coat. Set aside. Toss occassionally to recoat the meat.

  2. Meanwhile, chop all vegetables.

  3. In a wok or large skillet, heat the oil.

  4. Add garlic and ginger and stir about 30 seconds until fragrant. Add beef and sauce and stir fry about 5 minutes or until beef is no longer pink.

  5. Remove beef without juices to a bowl and keep warm.

  6. In remaining juices, add onion and fry about 1 minute then add peppers. Fry another minute or until the onions begin to soften.

  7. Add bok choy and mushrooms and toss to coat, stir frying until bok choy begins to wilt, about 2-3 minutes.

  8. Return beef to skillet and add scallions and cashews.

  9. Stir fry another minute or two more to allow juices and flavors to blend. Serve over hot cooked rice.
