Recipe Ingredients for Beef Bobotie

2 slices bread
1 1/4 c lowfat milk
2 onions, chopped
3 tbsp curry powder
1 lb ground beef
1 tsp black pepper salt
1 tbsp apricot jam
2 tbsp lemon juice
3/4 c egg substitute
1/3 c raisins
1/8 c sliced almonds

Recipe Directions for Beef Bobotie

  1. Soak bread in 2/3 c of milk.

  2. Stir fry onions until tender, then add curry powder and cook for 2 minutes.

  3. Add ground beef and brown. Remove from heat.

  4. Season with salt and pepper. Add jam.

  5. Mash the bread and add to pan with 1/4 c of egg substitute and raisins.

  6. Transfer to greased pan and cover with foil. Bake for 30 minutes at 350F.

  7. Combine remaining eggs and milk. Remove dish from oven and lower temperature to 300F.

  8. Break up meat and pour in egg mixture. Sprinkle almonds on top. Bake uncovered for about 30 minutes until set.
