Recipe Ingredients for Beef and Biscuit Casserole

1 pound Ground Beef
1/2 cup Diced Onion
1/2 cup Diced Bell pepper
1 clove Garlic
1 cup Tomato Sauce
4 tsp Chili Powder
1 tsp Salt
6 Biscuits, pillsburry grand
1/2 cup sour cream
1 Egg
4 oz low fat cheddar cheese

Recipe Directions for Beef and Biscuit Casserole

  1. Preheat oven to 375

  2. In a large skillet, cook ground beef just until it looses its pink color. Drain excess fat. Add diced onion, bell pepper and minced garlic. Cook over medium heat until onion is limp, about 5 minutes. Add tomato sauce, chili powder and salt. Simmer while preparing dough.

  3. Spray a 2-quart casserole with cooking spray. Separate each biscuit into 2 or 3 layers. Arrange of biscuits on bottom of casserole.

  4. Combine sour cream and beaten egg. Remove meat mixture from heat and stir in the sour cream mixture. Pour mixture over biscuit layer. Arrange remaining biscuits on top of meat mixture. Sprinkle cheese on top of biscuits.

  5. Place casserole in center of preheated oven. Bake for 30 minutes or until biscuits are brown and casserole is bubbly.
